Toowoomba March 31st 2012





It was lovely to see the countryside on the way to Toowoomba. Toowoomba itself was it beautiful self with a soft breeze, fresh air and a slight coolness about it.

Mystery of the Enchanted Woods

On a mountain high, a cold crystal stream flows
Through the enchanted forest
Waters from the stream reflect the colours of the forest

Leaves take flight in the cold morning breeze
Floating down upon the stream below like tiny coloured snowflakes
A beautiful girl with eyes as blue at the morning sky
Walks through the green fields towards the enchanted forest

Morning dew frozen on the blades of grass
Eagles soar high into the sky
As little finches folic along the forest floors
In the mist covered valleys towns people go about their business

For people fear the great lone wolf who resides in enchanted forest
The beautiful girl does not fear the enchanted forest
She loves siting next to the crystal clear stream
Her blue eyes reflect the blue of the sky

One cold clear winters day
The beautiful girl made her way to the enchanted forest
Upon the mountain the air fresh and bracing
Clouds descended upon the mountain the tiny snow flakes

Flakes settling in her beautiful long black hair
The beautiful girl under estimated the daylight
Lost and cold, she tried to find her way
Suddenly, she heard a low growl

It was the lone wolf of the enchanted forest
She did not fear the wolf, he was weary of humans
The beautiful girl approached the lone wolf
He lead her to the heart of the enchanted forest

People were there dancing and talking
The Wolf disappeared into the crowd of people
The beautiful girl kept walking toward the crowd
From the crowd a young man appeared

He walked towards the girl and looked into her blue eyes
My name is Prince, and mine is Angel she replied
You can sleep hear replied the Prince
At dusk, when the beautiful girl awoke there no sign of anyone.....

CHRISTMAS CAKE - HEARTFOUNDATION COOKBOOK


CHRISTMAS CAKE – HEART FOUNDATION COOK BOOK

Preparation Time
Approx 30mins and overnight standing of fruits

Cooking Time
3hours 3o minutes

Ingredients
• 1 Kg mixed dried fruit
• 150g glace apricots, chopped
• 150g glace cherries, chopped
• 50g glace ginger, chopped
• 250ml brandy
• 1 cup soft brown sugar
• 2 tablespoons olive oil
• 3 eggs whites lightly beaten
• 1 teaspoon vanilla essence
• 100g blanched almonds, roughly chopped
• 1 tablespoon lime ginger marmalade
• 60ml orange juice
• 2 cups plain flour
• ½ cup self-raising flour
• 2 teaspoons mixed spice

What to do
1. Put mixed dried fruit, apricots, cherries and ginger in a large bowl and mix. Pour over the brandy and stand overnight
2. Next day, Preheat oven to 150°c. Grease and line base and sides of a 20cm round tin, or 23cm square tin with 2 layers of bakng paper.
3. Put sugar, oil, egg whites and vanilla into a bowl and beat until smooth. Add almonds, marmalade and orange juice and stir through the dry fruit mixture.
4. Sift flours and spice into a large bowl, then fold in the fruit. Spoon mixture into a prepared tin, then tap tin on the bench to remove any air bubbles. Smooth surface with damp wet hands. Bring the greaseproof paper about 5cm above the tin, to make sure the cake doesn't darken to much during cooking.
Bake cake on the middle self of the oven for 3hrs 30minutes, or until a skewer comes out clean from the centre of the cake

Icing Recipe
• 1 egg white
• 2 teaspoons lemon juice
• ½ cup pure icing sugar, sifted
Blend all ingredients together until smooth
